Feta & beetroot salad

INGREDIENTS
- Cooked beetroot
- Feta cheese
- Apple
- Mint
- Spring onion
- Lime
- Oregano
- Olive oil
- Salt & pepper
RECIPE
- Cut the beetroot into small cubes. Season this with lime juice, olive oil, oregano, salt and pepper
- Cut and apple into thin slices and cut the spring inion. Mix it with the beetroot and add crumbled feta. Taste and add more seasoning if needed
- Top it of with some chopped mint
