Fennel & tomato salad w/ burrata

INGREDIENTS
  • Fennel
  • Burrata cheese
  • Handful of cherry tomatoes
  • Lime
  • Flat parsley
  • Salt (herbamare)
  • Pepper
  • Olive oil
RECIPE
  • Cut the fennel into very thin slices (I used a mandolin). Mix this with the juice of 1/2 lime, a splash of olive oil, salt, pepper and chopped parsley. Let this sit for at least 5 min (this makes the fennel less hard)
  • Cut the cherry tomatoes and take the burrata out of the packaging
  • Put everything together and add some more olive oil, lime juice, salt and pepper to taste
