INGREDIENTS
- Salmon filet
- Fennel
- Lime
- Flat parsley
- Piment d'espelette
- Olive oil
- Salt & pepper
RECIPE
- Cut the salmon into really thin slices and keep it in the fridge
- Cut the fennel using a mandolin on the finest setting
- Mix the fennel and salmon with lime juice, salt and pepper
- Add some piment d'espelette, parsley and olive oil
