Eggplant, zucchini & goat cheese quiche

INGREDIENTS
  • Quiche dough
  • Zucchini
  • Eggplant
  • Eggs
  • Milk
  • Heavy cream
  • Emmentaler cheese
  • Goat cheese
  • Nutmeg
  • Salt
  • Pepper

RECIPE
  • Preheat the oven to 180°C
  • Cut the veggies into thin slices and grill them in a grilling machine until cooked but still firm (or in a pan with olive oil)
  • Place the dough into the quiche pan. Make small holes with a fork and place it in the oven until lightly browned. Take it out and let it cool
  • Mix 4 eggs with cream and milk (1/2 cream, 1/2 milk). Season with salt, pepper and nutmeg. Add a small handful of emmentaler cheese and some goat cheese bits
  • Put the veggies on the dough and cover them with the egg mixture
  • Cook everything for 30-40 min or until it’s cooked
