Eggplant rolls in tomato sauce

INGREDIENTS
  • Eggplant
  • Minced meat
  • Basil
  • Ricotta cheese
  • Think tomato sauce
  • Mozzarella cheese
  • Salt & pepper
  • Olive oil
RECIPE
  • Cut the eggplant into thin slices length-wise. Cook each slice in a pan with olive oil, salt and pepper
  • Cook a shallot and some garlic in a pan with olive oil on medium heat. Add minced meat and season with rosemary, thyme, oregano, salt and pepper
  • Put the ricotta in a pot, add the minced meat and chopped basil. Taste and season with some more salt and pepper
  • Roll up the eggplant slices with some ricotta mix inside. Place them in an oven dish
  • Add the tomato sauce and some mozzarella slices
  • Cook everything in the oven for 30 min at 180°C
  • Broil everything at the end for 5-10 min at 200°C (until the mozzarella has browned a little bit)
