Yellow curry chicken soup

INGREDIENTS

  • Chicken
  • Yellow curry paste
  • Cherry tomatoes
  • Coconut milk 
  • Lime
  • Red bell pepper
  • White rice
  • Cilantro
  • Fish sauce
  • Ginger
  • Garlic
  • Red onion
  • Sesame seeds 
  • Olive oil
  • Salt & pepper

RECIPE

  • Heat a pot with olive oil and cook roughly chopped ginger, minced garlic and some chopped red onion on medium heat. Cook until fragrant and add a good amount of yellow curry paste
  • Cut the chicken into thin strips. Cut the red pepper as wel
  • Cook the chicken until slightly browned in a separate pan. Season with salt & pepper and add to the pot with the spices
  • Add coconut milk to the pot and let it simmer. Remove the big chunks of ginger
  • Add the red pepper and let everything simmer om medium-low heat until the veggies are tender
  • Cook the rice and drain it. Add some sesame oil, lime zest and sesame seeds
  • Taste, season with salt & pepper and top it of with some sesame seeds, lime juice and cilantro
