Creamy sun-dried tomato tortellini

INGREDIENTS
  • Tortellini with ricotta and spinach
  • Heavy cream
  • Sun-dried tomatoes
  • Smoked bacon
  • Basil
  • Salt
  • Pepper
  • Parmesan cheese
  • Olive oil
RECIPE
  • Heat up a pan and cook the bacon and the sun-dried tomatoes at the same time until the bacon has browned a bit
  • Drain some fat from the pan and add the heavy cream. Let this simmer on medium heat until the sauce starts to bubble. Lower the heat and season with salt and pepper
  • Bring water to a boil and add salt, cook the tortellini and save 1/2 cup of pasta water
  • Gently drain the tortellini and add them to the sauce, add some pasta water, grated parmesan cheese and fresh basil. Stir until combined
