Coconut shells

INGREDIENTS

  • Cockles
  • Coconut milk 
  • White wine
  • Garlic
  • Shallot
  • Ginger
  • Chili
  • Cilantro
  • Fish sauce
  • Lime
  • Olive oil
  • Salt & pepper

RECIPE

  • Clean the cockles thoroughly. Rinse them in a cold water bath for about 5 times to get rid of remaining sand
  • Chop some garlic, ginger, shallot and red chili. Let this simmer on medium heat in a pan with loads of olive oil. Simmer until fragrant
  • Turn up the heat and add the cockles to the pan. Add a good amount of white wine and some coconut cream. Let this cook with a lid until all the cockles have opened
  • Take off the lid and add lime juice and fish sauce. Top it of with some cilantro and sesame seeds
