INGREDIENTS
- Cockles
- Coconut milk
- White wine
- Garlic
- Shallot
- Ginger
- Chili
- Cilantro
- Fish sauce
- Lime
- Olive oil
- Salt & pepper
RECIPE
- Clean the cockles thoroughly. Rinse them in a cold water bath for about 5 times to get rid of remaining sand
- Chop some garlic, ginger, shallot and red chili. Let this simmer on medium heat in a pan with loads of olive oil. Simmer until fragrant
- Turn up the heat and add the cockles to the pan. Add a good amount of white wine and some coconut cream. Let this cook with a lid until all the cockles have opened
- Take off the lid and add lime juice and fish sauce. Top it of with some cilantro and sesame seeds
