INGREDIENTS
- Chicken filets
- Chorizo slices
- Mozzarella cheese
- Sun-dried tomatoes
- Cherry tomatoes
- Basil
- Eggplant
- Zucchini
- Oregano
- Shallot
- Salt & pepper
- Olive oil
RECIPE
- Flatten out the chicken filets between two baking sheets using a pan. Season them with salt & pepper
- Put chorizo on the chicken with some bits of mozzarella. Rolls this up and secure the rolls with wooden skewers. Drizzle some olive oil on top
- Cook the chicken rolls in the oven for 20 min at 180°C
- Chop a shallot and cook it in a pan with olive oil. Add diced, eggplant, zucchini and cherry tomatoes. Season with salt, pepper and oregano. Let everything simmer until tender. Add basil at the end
- Garnish the dish with parsley
