Chorizo chicken rolls w/ ratatouille

INGREDIENTS

  • Chicken filets
  • Chorizo slices
  • Mozzarella cheese
  • Sun-dried tomatoes
  • Cherry tomatoes
  • Basil
  • Eggplant
  • Zucchini
  • Oregano
  • Shallot
  • Salt & pepper 
  • Olive oil 

RECIPE

  • Flatten out the chicken filets between two baking sheets using a pan. Season them with salt & pepper
  • Put chorizo on the chicken with some bits of mozzarella. Rolls this up and secure the rolls with wooden skewers. Drizzle some olive oil on top
  • Cook the chicken rolls in the oven for 20 min at 180°C
  • Chop a shallot and cook it in a pan with olive oil. Add diced, eggplant, zucchini and cherry tomatoes. Season with salt, pepper and oregano. Let everything simmer until tender. Add basil at the end
  • Garnish the dish with parsley
