Chorizo & mozzarella spaghetti

INGREDIENTS
  • Spaghetti
  • Mozzarella cheese
  • Parmesan
  • Chorizo
  • Fresh spinach
  • Cream
  • Tomato paste
  • Shallot
  • Garlic
  • Oregano
  • Olive oil
  • Salt & pepper
RECIPE
  • Heat up some water for the pasta. Season it with salt. Add the pasta once the water is boiling
  • Cut a shallot, garlic and chorizo. Cook the in a pan with olive oil add oregano and tomato paste and let it simmer
  • Add the cream to the pan. Let this simmer until the cream has thickened. Turn of the heat and season with salt & pepper
  • Drain the pasta but save a cup of pasta water. Add the pasta to the sauce, add some pasta water and parmesan cheese and stir until combined
  • Cut mozzarella cheese and use it to top of the pasta. Add some fresh basil and some pepper
