Chimichurri meatballs

INGREDIENTS

  • Minced meat 
  • Shallot
  • Garlic
  • Fresh & dried oregano
  • Cilantro
  • Parsley
  • Chili
  • Red wine vinegar
  • Olive oil 
  • Salt & pepper

RECIPE

  • Mix the minced meat with a chopped shallot, nutmeg, salt and pepper. Roll it into meatballs and cook them in a pan with olive oil
  • Peel your potatoes
  • Bring some water to a boil. Cook the potatoes in salted water until tender
  • Make the chimichurri by mixing fresh oregano, dried oregano, cilantro, flat parsley, fresh chili, garlic, shallot, red wine vinegar and olive oil. Taste and season with salt and pepper
  • Drain the potatoes and add them to the pan with the meatballs. Let them brown for a few minutes and serve with the chimichurri
