Heat up some olive oil in a pot and chop some red onion & garlic. Let this simmer on medium heat and add cinnamon powder, paprika powder, coriander powder, chili flakes and oregano
Cut the yellow bell pepper and cherry tomatoes. Add these to the pot and let it simmer for 15-20 min
Add the canned corn and kidney beans. Add some more canned tomatoes if there is not enough sauce
Let this simmer for at least 20 min. Taste and season with salt and pepper to taste
Rinse the sweet potato. Make some tiny holes with a fork or a sharp knife. Put this in the microwave for 7 minutes. Take it out and cut it length wise, hollow out the insides with a spoon or a fork. If the insides are still hard put it back in the microwave for a few more minutes
Serve the chili sin carne on top of the sweet potato. Top it of with some chives, grated cheese and a small piece of lime. Serve with and avocado in the side
