Chili sin carne loaded sweet potato

INGREDIENTS
  • Red onion
  • Garlic
  • Cherry tomatoes
  • Canned tomatoes
  • Canned corn
  • Canned kidney beans
  • Yellow bell pepper
  • Koriander powder
  • Cinnamon powder
  • Paprika powder
  • Oregano
  • Chili flakes
  • Olive oil
  • Chives
  • Grated cheese
  • Salt & pepper
RECIPE
  • Heat up some olive oil in a pot and chop some red onion & garlic. Let this simmer on medium heat and add cinnamon powder, paprika powder, coriander powder, chili flakes and oregano
  • Cut the yellow bell pepper and cherry tomatoes. Add these to the pot and let it simmer for 15-20 min
  • Add the canned corn and kidney beans. Add some more canned tomatoes if there is not enough sauce
  • Let this simmer for at least 20 min. Taste and season with salt and pepper to taste
  • Rinse the sweet potato. Make some tiny holes with a fork or a sharp knife. Put this in the microwave for 7 minutes. Take it out and cut it length wise, hollow out the insides with a spoon or a fork. If the insides are still hard put it back in the microwave for a few more minutes
  • Serve the chili sin carne on top of the sweet potato. Top it of with some chives, grated cheese and a small piece of lime. Serve with and avocado in the side
