INGREDIENTS
- Canned coconut milk
- Ginger
- Lemongrass
- Lime,
- Onion
- Curry powder
- Turmeric powder
- Paprika powder
- Cayenne pepper
- Vegetable stock
- Red bell pepper
- Chickpeas
- Broccoli
- Snap peas
- Fish sauce ⠀⠀
- Salt & pepper
- Olive oil
RECIPE
- Cut the onion, ginger and lemongrass into big chunks. Cook it in a pot with olive oil
- Add the coconut milk and let this simmer on low heat for 10 min. Take out all the big chunks. Season with curry powder, turmeric, paprika powder, cayenne pepper, salt and pepper
- Add the broccoli and red bell pepper. Simmer for 5 min, add the snap peas and simmer for 3 more minutes
- Add the chickpeas at the end along with fish sauce, lime juice, salt & pepper
- Garnish with cilantro
