Chickpea shakshuka

INGREDIENTS
  • Shallot 
  • Cherry tomatoes 
  • Red bell pepper 
  • Canned chickpeas 
  • Tomato paste 
  • Eggs
  • Cilantro
  • Chives
  • Cumin
  • Paprika powder
  • Chilli flakes
  • Salt & pepper
  • Olive oil
RECIPE
  • Heat up some olive oil on low heat. Add a chopped shallot, cumin, paprika powder, tomato paste and let this simmer for 5 min
  • Add chopped red bell pepper and chopped cherry tomatoes. Add a small amount of water and let this simmer on medium heat with a lid
  • Add the chickpeas and season with salt and pepper
  • Make small wells in your sauce to place the eggs. Make sure the heat is on medium heat and place the eggs in the sauce. Cover it with a lid and check regularly to see when your eggs are cooked
  • Toast some bread and top the shakshuka of with some fresh chives and cilantro
