Chicken & sweet potato curry

INGREDIENTS

  • Chicken
  • Sweet potato 
  • Rice 
  • Red bell pepper
  • Cucumber
  • Chicken stock
  • Lime
  • Red onion 
  • Garlic
  • Ginger
  • Cumin powder
  • Paprika powder
  • Coriander powder
  • Olive oil
  • Salt & pepper

RECIPE

  • Cook the chicken in olive oil and add salt, pepper, cumin powder, paprika powder, coriander powder.
  • Remove the chicken from the pan. Cook some garlic, ginger and red onion in this pan. Let simmer until fragrant
  • Clean and cut the sweet potato. Boil it in salted water for 3-4 min and drain it
  • Cut the tomatoes and bell pepper. Add this to the pan with the onion and garlic. Add more spices and salt & pepper. Let this simmer
  • Add a small cup of chicken stock. to the pan. When the bell pepper is cooked, use a blender/stand mixer to smoothen the sauce. Add the sweet potato and the chicken back to the sauce and cook until most of the water has evaporated
  • Cook the white rice according to the instructions on the packaging
  • Cut the cucumber into thin strips. Add lemon juice and salt. Let this sit and drain the excess water
