INGREDIENTS
- Chicken
- Sweet potato

- Red bell pepper

RECIPE
- Cook the chicken in olive oil and add salt, pepper, cumin powder, paprika powder, coriander powder.
- Remove the chicken from the pan. Cook some garlic, ginger and red onion in this pan. Let simmer until fragrant
- Clean and cut the sweet potato. Boil it in salted water for 3-4 min and drain it
- Cut the tomatoes and bell pepper. Add this to the pan with the onion and garlic. Add more spices and salt & pepper. Let this simmer
- Add a small cup of chicken stock. to the pan. When the bell pepper is cooked, use a blender/stand mixer to smoothen the sauce. Add the sweet potato and the chicken back to the sauce and cook until most of the water has evaporated
- Cook the white rice according to the instructions on the packaging
- Cut the cucumber into thin strips. Add lemon juice and salt. Let this sit and drain the excess water
