Chicken pita w/ roasted cauliflower

INGREDIENTS
  • Pita bread
  • Chicken breast
  • Red bell pepper
  • Cherry tomatoes
  • Spring onion
  • Cauliflower
  • Red onion
  • Cucumber
  • Chives
  • Parsley
  • Pomegranate seeds
  • Curry powder
  • Chicken spice mix
  • Ras el hanout
  • Mayonaise
  • Lime
  • Salt & pepper
  • Olive oil
RECIPE
  • Cut up the chicken into small cubes. Melt some butter in a hot pan and add chicken seasoning, a diced shallot and diced red bell pepper. Add the chicken and cook until browned
  • Cut up the cauliflower and season it with ras el hanout, salt and pepper. Add olive oil and cook it in the oven for 20-30 min at 180°C (heat & grill)
  • Mix the mayo with curry powder, some lime juice and salt and pepper to taste
  • Cut the cucumber, red onion and cherry tomatoes
  • Add spring onion, parsley, chives, olive oil, salt and pepper to the tomatoes
  • Toast the pita bread
