Caesar little gem salad

INGREDIENTS
  • Chicken thighs
  • Little gem salad
  • Avocado
  • Green asparagus
  • Lime
  • Parmesan cheese
  • Parsley
  • Greek yoghurt
  • Mayonaise
  • Salt & pepper
  • Olive oil
RECIPE
  • Cook the chicken in a hot pan with olive oil. Cook it until the skin has browned. Add it to a dish and cover it with olive oil, salt, pepper, parmesan cheese and some lime zest. Cook this in the oven for 20 min at 180° or until the chicken is fully cooked
  • Take a new pan and heat it up with some olive oil. Add the green asparagus to the pan, season with salt and pepper and cook them until they’re done
  • Cut the little gem salads in half and also cook them in a pan with olive oil. Cook them until they’ve browned a little bit
  • Cut up an avocado and place al the components together
  • Dressing: mix greek yoghurt with a tablespoon of mayo. Season with salt, pepper and lime. Add finely chopped parsley
  • Top everything of with some more parmesan cheese and parsley
