Butternut 'spaghetti' with halloumi

INGREDIENTS
  • Spiralized butternut
  • Halloumi cheese
  • Cherry tomatoes
  • Shallot
  • Pointed red pepper
  • Zucchini
  • Parsley
  • Oregano
  • Thyme
  • Rosemary
  • Olive oil
  • Parmesan cheese
  • Salt & pepper
RECIPE
  • Cook a small onion in olive oil. Add the dried herbs and cherry tomatoes. Let this simmer until the tomatoes are cooked. Add more olive oil if needed and season with salt and pepper
  • Add the butternut, zucchini and red pepper. Let this simmer on low heat with a lid until cooked
  • Cut the halloumi and cook it in a pan without any olive oil or butter. Season it with the dried spices (no salt) and flip it when it’s browned on one side
  • Put everything together and top it off with some parsley and parmesan cheese
