Broccoli and spinach meatballs

INGREDIENTS
  • Minced meat
  • Shallot
  • Cream
  • Broccoli
  • Spinach
  • Rosemary
  • Thyme
  • Parsley
  • Chives
  • Dried oregano
  • Potatoes
  • Butter
  • Salt & pepper
RECIPE
  • Bring two pots of water to a boil and add salt
  • Cut the broccoli, a shallot and spinach
  • Cook the broccoli in boiling water until tender but not overcooked. Drain it and let it dry
  • Cut the potatoes into small pieces and cook them in boiling water as well. Cook until tender and drain
  • Melt some butter in the empty pot and add the potatoes back to the pot. Season with salt and pepper and add fresh rosemary and parsley
  • Season the minced meat with salt & pepper. Add a chopped shallot to the mixture and roll it into meatballs
  • Cook the meatballs in a pan with butter until browned on all sides. Remove them from the pan and set aside
  • Cook the spinach in the pan from the meatballs and season with salt and pepper. Lower the heat to medium once the spinach is cooked and add the meatballs back in
  • Add the cream to the meatballs along with chopped parsley, chives, rosemary, thyme and oregano. Let this simmer in low heat and add the broccoli. Simmer until the meatballs are cooked and the cream has reduced
  • Taste and season with more salt and pepper if needed
