Salmon tartare w/ avocado cream

INGREDIENTS
  • Salmon filet
  • Avocado
  • Leek sprouts
  • Lime
  • Sesame oil
  • Soy sauce
  • Ginger
  • Spring onion
  • Cilantro
  • Salt & pepper

RECIPE

  • Cut the salmon into very small cubes and set this aside in the fridge
  • Make a mixture of sesame oil, soy sauce and lime juice. Add grated ginger, chili flakes, chopped spring onion, cilantro and sesame seeds
  • Add this to the salmon and mix it. Taste and add salt and pepper if needed
  • Mix the avocado with a stand mixer. Add lime juice, salt, pepper and chili flakes. Taste this and season it some more if needed.
  • Put this in small glasses or bowls. First a layer of avocado cream, then some salmon and top it of with some leek sprouts
